Not a Texas fan at all. More of a 1-AA fan myself since I attended two of them. Get enough grief for that from a tournament buddy of mine. |

Z - mixing up a batch of chile's. Got some pablano, jalapeno, and serrano's mixed with some mexican and salvadorean chorizo, onion, red pepper, some red beans, and a little chipotle and arbol salsita for seasoning. What ya think? Should I throw in some chili pepper and chayenne to add a little spice?

mmmmhhhmmm wont need the chili or chayenne pepper since you use chipotle sauce..which is a sauce made from both of them.. only one question. are the pino's and serrano's pickeled or fresh?? there is a distint differance in taste using pickeled over fresh.. i would add some pig tails or an pork knuckle bone to the mix to get a true mexican taste.. zooker

All chile's were fresh. Didn't take many Serrano's to give it some kick. Wooooooooooooooooo! That's good stuff.
Never thought about adding some pork. Maybe next time. |

pork, goat, chicken,sheep,pa'to,or pada'r is all good..remember in meixco alot of the old well known chili mixes did not have beef since beef was a "cash crop"for hundreds of years. where as pigs, sheep,chicken, and goats were used as food..pa'to -waterfowl- or pada'r-rabbits- needed to be hunted and were not an "everyday" food source...
that being said the mexican style cooking tends to lend it self to more toward pork, chicken, and goat..sheep are not as plentiful as they once were. zooker

chicken feet,turkey necks,pig tails,rooster combs.yeah i have had them all. all are very good cooked by experianced latino woman..the style they are cooked differ but thats it..

Hahahaha nofear. And 3d, what do you think of NORTH ALABAMA? I haven't really kept up but last i saw they were number 1. I was asked MANY,MANY,MANY years ago to try to walk on there. Always a fan of UNA since.
