After years of research I have the perfect breakfast buritto

This will impress anybody who tries it.
Start with two onions chopped into 1/4 inch sections and 1/2 stick real butter in a large pan. Must have lid for pan.
Now cut 6 golden potatoes into 1/4 inch pieces. This is where knife skills come into play. Cut length wise into 1/4 slices and assemble into two half's. Now cut 1/4 inch french fries and rotate to cut 1/4 inch cubes. Add to pan and mix well. Take lid and put some water in it and pour into pan. Cover and let steam for about 15 minutes. While that is working scramble 6 eggs and cut 6 slices of precooked bacon into 1/4 inch pieces. Check potatoes to see if they are soft and if so remove lid and fold often.
Add bacon and a nice ribbon of Srirachi to add heat. Stir many times and then when water is gone add eggs and fold often.
Turn off heat once eggs are cooked and add a generous amount of shredded Mexican cheese. (Taco Cheese)

Take flour tortillas and microwave for 20 seconds and put mix in center. A nice dollop of sour cream on top and fold closed.

Yea, you will like it allot and so will every body else. Can be made up to the cheese and reheated on the back of a pickup truck in the surf n sand and served to hungry fisherman.
